EVERY Company Inc. Secures Key Patent for Precision Fermentation-Derived Egg Proteins

EVERY Company Inc., the food technology company based in San Francisco, has received its latest primary patent no. US 12/096,784. It is a space patent about the progression of egg proteins derived from precision fermentation which enhances EVERY’s patent portfolio and fortifies its position as a food technology leader. The patent claims that any food product reclamation purposes should use products that contain recombinant ovalbumin, the primary egg white protein in the food enhancement system, and at least one other edible ingredient. Ovalbumin is about fifty-four percent protein in an egg white, the chief protein that makes an egg useful in applications such as foam, binding, gelling, and nutrition where the egg or egg white is an ingredient. 

The patent claims coverage for variants of wild-type ovalbumin and ovalbumin obtained from several bird species in farm environments and cultivated using different yeasts and fungi, with the assistance of various technologies. The patent is significantly broad in product format categories, and functional uses such as hardness, cohesiveness, springiness, chewiness, foam stability, and both dry and aqueous systems of the composition.

EVERY Co-Founder and CEO Arturo Elizondo referred to this patent as a significant achievement for EVERY owing to the multifunctional potential of ovalbumin. The patent comes on the heels of EVERY’s major partnership announcements with Unilever, Grupo Palacios, and Grupo Nutresa as EVERY gears up for mass-market operations.
